Non loin des vignes,&nbsp; certains chênes verts, charmes, noisetiers ou tilleuls&nbsp; grandissent&nbsp; dans la plus grande discrétion. L’hiver venu, hommes et chiens parcourent méticuleusement ces endroits secrets&nbsp; pour récolter un champignon de couleur noire qui donne une saveur particulière aux repas de fêtes : la truffe.<br />
Le noir du torula compniacensis sur les murs et le noir du tuber melanosporum racontent une belle histoire, celle du temps et de la nature.</p>

<p><strong>Des anges un peu gourmands</strong></p>
<p>Après la distillation qui s’arrête à la fin de l’hiver, l’eau de vie est&nbsp; mise en barrique de chêne. Elle&nbsp; va vieillir dans l’obscurité des chais&nbsp; pendant de longues années. Un subtil échange nait&nbsp; entre la barrique à la fois étanche et perméable,&nbsp; et son précieux contenu. Il&nbsp; va permettre au fil du temps de&nbsp; diminuer la force&nbsp; alcoolique et le&nbsp; volume du cognac tout en révélant peu à peu&nbsp; ses arômes complexes. Cette évaporation naturelle est appelée « <strong>la part des anges</strong> ». Des anges amateurs de cognac&nbsp; et pour le moins gourmands puisqu’il est courant de dire que l’équivalent de plus de 20 millions de bouteilles&nbsp;&nbsp; sont « bues » par les anges chaque année&#8230; Ces vapeurs d’alcool qui se dégagent des chais nourrissent le torula compniacensis, petit champignon microscopique, c’est lui qui donne cette couleur noire aux pierres et aux toits de tuiles. Il désigne donc&nbsp; naturellement l’emplacement d’un trésor qui évolue lentement à l’abri de regards.</p>

<p><strong>Un champignon noir pour les gourmets</strong></p>
<p>Sur les&nbsp; terres calcaires du cognac, bénéficiant de la proximité immédiate de l’Atlantique, la truffe a trouvé son territoire depuis plusieurs siècles. Il se dit même que le roi François 1er, né à Cognac, aurait été l’instigateur de la notoriété de la truffe en Charente dès le 16èsiècle.&nbsp; La truffe a connu son&nbsp; apogée en 1870 après la crise du phylloxera qui ravagea le vignoble.</p>
<p><img decoding="async" class="alignnone size-full wp-image-1416" src="http://livingincognac.com/wp-content/uploads/2016/09/livingincognac-truffle-1.jpg" alt="livingincognac truffle " width="2048" height="1360"> Les viticulteurs ont alors planté des truffières. Le marché de la truffe en Charente produisait à lui seul 50 tonnes par an soit 10 tonnes de plus que la production nationale&nbsp;aujourd&rsquo;hui.&nbsp;On compte &nbsp;700 hectares de truffières&nbsp; disséminées dans la campagne charentaise. La culture de la truffe reste mystérieuse et aléatoire en fonction des années.&nbsp;La récole a lieu entre novembre et février.</p>

<p>Je vous emmènerai à la saison dans un lieu prisé des amateurs : le&nbsp; marché aux truffes de Jarnac, qui démarre au son de la trompe à 9 heures 30 précises.<br />
En bref, deux champignons très différents qui ont en commun un rapport direct à la patience, au savoir-faire, au temps qui s’écoule lentement et à une alchimie subtile qui n’a rien d’automatique ou de certain.<br />
Ici, le noir est une promesse de bonheur.</p>
<p>Nul doute que cette double&nbsp;histoire&nbsp;plairait au maître du noir : l&rsquo;immense Pierre Soulages, dont le musée à Rodez est une merveille.</p>

										<content:encoded><![CDATA[<p>At first glance, visitors are often surprised by the black walls and roofs in cognac landscape. Far from being a sign of dirt or neglect, this colour means wealth : cognac sleeps inside. Nearby vineyards, and well protected, some green oaks, hazelnuts or linden trees, grow in the utmost secrecy. On winter time, men and dogs roam theses places to harvest a precious black mushroom : the truffle. Both sides, it&rsquo;s telling  time, patience and skill.<span id="more-503"></span><strong>Greedy angels</strong></p>
<p>After the distillation, the eau-de-vie, begins its long ageing period in oak casks, carefully stored in the darkness and humidity of the cellars. The natural porosity of the wood, allow exchanges between air and eau-de-vie. A natural process which gives progressively to cognac, its unique flavor, amber color and bouquet. The evaporation is called « la part des anges » the share of the angels. We used to say that angels are a bit greedy : they « drunk » the  equivalent of 20 millions of bottles per year. This evaporation feed a very small fungus called torula compnaciencis, covering walls and roofs of the cellars. So, the black walls protect a treasure slowly ageing out of sight.</p>

<p><strong>The black truffle</strong></p>
<p>The truffle, appreciated by the gourmets,  likes the chalky clay soil of cognac, close to Atlantic ocean, since several centuries. King of France François 1er, born in Cognac,  would be the one who instigated to the developpement of the culture here. After the phylloxera disaster at the end of 19 century, winegrowers who lost all their vineyards, planted trees devoted to truffles. Nowadays, 700 ha are hidden in cognac region. The tuber melanosporum is harvested between december and march. The business of gathering and selling the truffles is still surrounded by tradition and some mystery&#8230;</p>

<p>At the season time, we will go to a particular place : the truffle market of Jarnac. The sales start at 9:30 am at the sound of the horn.</p>

<p>May be the poetic story of « la part des anges » could inspire  Pierre Soulages, one of the most renowned french contemporaty artist in the world. Master of the black and one of the leading figure of abstract art,  he is present in some 90 museums,  has created more than 1,500 works of art and held countless exhibitions around the globe.</p>
